摘    要:谷物的过度加工和饮食结构变化是影响糖尿病等慢性疾病发病率日益攀升的重要因素。本文介绍了血糖生成指数的概念和一些常见谷物的血糖生成指数。其中影响谷物及其制品血糖生成指数的因素主要包括食物成分与理化性质和食物加工烹调方式。健康谷物的研发推广以及血糖生成指数相关标准的建立健全将对减少慢性疾病的患病风险,提高国民健康具有重要意义。

Abstract:Excessive grain processing and dietary changes are important factors affecting the increasing incidence of chronic diseases such as diabetes. This article introduces the concept of glycemic index and the glycemic index value of some common grain and its products. Meanwhile the factors that affect the glycemic index of grain and its products mainly include food ingredients and physical and chemical properties and food processing and cooking methods. The development and promotion of healthy grain products and the establishment and improvement of relevant standards for glycemic index would be of great significance to reduce the risk of chronic diseases and improve national health.
