| 摘 要： | 本文就酒体中主要微量元素,人工催陈和激光催陈实验结果进行了分析,指出了激光陈化大曲酒,效果是良好的。经处理后,加速了酒的老熟。经测试分析,有益成分含量增加,有害成分含量减少。经感官品评,处理后的酒样,色清透明,陈香较明显,辛辣味减少,味较醇和,酒体较协调,后味略短淡。相当于自然老熟半年酒左右的质量水平。

| Abstract: | In this paper,the experimental results on major trace el - ments in liquor by man-made catalysis and by laser catalysis are ana- lysed respectively.It shows that laser catalysis produces the favorable effect.Laser means accelerate the process of catalysis.It is reported from the analytical test results that the amount of the beneficial ele- ments is increased while that of the harmful elements decreased in liquors.The processed liquor sample looks transparent and colorless, smells sweet,tastes less pungent,purer and milder.The quality of liquors by laser catalysis is comparable to that of liquors which have been naturally stored for half a year |
