金属离子对双乙酰代谢影响的初步研究

摘    要:通过在酿造麦汁中添加不同浓度的无机盐 ,从酵母生长代谢的营养环境角度来研究Na ,K ,Mg2 ,Ca2 等离子对啤酒酵母生长代谢过程中双乙酰的影响。研究结果表明 ,在啤酒工业的酿造麦汁中适当调整Na ,K ,Mg2 ,Ca2 等离子浓度有利于促进酵母的生长代谢和调控双乙酰的动态变化趋势

Abstract:From the point of view of the nutrient environment of beer yeast in the course of the growth and breed, this article mainly studied the influence of Na~ ,K~ ,Mg~(2 ),Ca~(2 )on diacetyl during the growth and metabolism of beer yeast, by adding the different amount of inorganic salts. The experimental result showed that the brewing malt ,by regulating the ionic concentration properly, facilitated the metabolism of the yeast and the supervision on the dynamic changes of diacetyl.
