固态发酵三七渣产红曲红色素的工艺条件研究

摘    要:通过单因素及正交试验考察了装样量、接种量、培养温度、预处理时间、发酵时间对固态发酵三七渣产红曲红色素的影响。结果表明,发酵过程受工艺条件的影响较大,其中接种量、装样量、培养温度对发酵结果的影响均极显著(P<0.01),这3个因素以及它们之间的交互作用对发酵结果影响程度的排序为交互作用>培养温度>装样量>接种量。最佳发酵工艺条件为接种量15%、装样量12.5 g、培养温度34 ℃、预处理时间40 min、培养时间12 d,在此优化条件下,红曲红色素色价可达14.53 U/g。

Abstract:The effects of loading volume, inoculum, culture temperature, pre-treatment time and fermentation time on the production of Monascus red pigment from Panax notoginseng residues by solid-state fermentation were investigated by single factor and orthogonal experiments. The results showed that the fermentation process was greatly affected by the technological conditions. Among them, the inoculum, loading volume and culture temperature had a significant effect on fermentation results (P<0.01), and the effect order of the three factors and the interaction among them on the fermentation results was interaction>culture temperature>loading volume>inoculum. The optimum fermentation technology conditions were as follows: inoculum 15%, loading volume 12.5 g, culture temperature 34 ℃, pre-treatment time 40 min, and culture time 12 d. Under the optimal conditions, the color value of Monascus red pigment could reach 14.53 U/g.
