甘草甜素的生理功能及其在食品工业中的应用

摘    要:甘草甜素是从药用植物甘草根茎中提取出来的一种具有多种生理功能的有效活性成分。因其具有良好的味感和多种功能性质,作为一种天然甜味剂在食品工业中具有广阔的应用前景。本文就甘草甜素理化性质、功能特性、生理功能及其在食品工业中的应用做一综述,并对其开发应用前景进行了展望。

Abstract:Glycyrrhizin is a multi - physiological functional and active ingredient which extracted from rhizome of liquorices. For the reason of good taste and multi - functional properties, it can be used widely as a natural sweetening agent in food industry. The physical and chemical property, functional properties, physiological function of glycyrrhizin and its application in food industry were reviewed in this article, and its application prospect has also been put forward prospected.
