小麦受蛀食性害虫侵害后其面筋蛋白结构的变化

摘    要:以河南产储藏3 a的商用小麦为材料,按不同虫种分组,采用Ellman’s试剂比色法检测不同感染时间小麦面筋蛋白的—SH和—S—S—含量,利用傅里叶变换红外光谱(FTIR)测定小麦面筋蛋白二级结构的变化.结果表明:随着侵害时间的延长,样品中—SH含量升高,—S—S—含量下降;影响的大小顺序为:谷蠹、米象、玉米象;无论是在相同侵害时间的不同虫口密度,还是相同虫口密度的不同侵害时间条件下,3种害虫侵害小麦后对小麦面筋蛋白的二级结构没有影响.
