摘    要:都市菜品与乡村菜品是我国餐饮菜品的两大支柱.自古以来,都市菜品在地区乃至全国一直具有先锋和带头作用,但它又离不开乡村菜这个根本.都市菜品的优长,在于它善于吸收、善于变化,以适应不同时代、不同地域、不同阶层的人群.随着社会的发展和中外交流的频繁,都市菜品一方面将向“国际食都”发展,但另一方面,都市菜品的风味特色也将逐渐减弱.

Abstract:City dish and country dish are the two pillars in Chinese dishes. Since ancient time, city dish has played a vanguard role in China, but country dish is its basis. The advantages of city dish are that they are good at absorbing, changing to abjust to different ages, areas and levels of people. With the social development and frequent exchange of China and foreign countries, city dish will develop towards "international food city" in one way andits speciaty is weakening in another way.
