藏花素理化性能的测试

摘    要:藏花素是从茜草科植物栀子的果实中提取精制的一种天然食用黄色素。本文对藏花素的理化性能作了全面的测试,用紫外一可见分光光度计,红外光谱仪测定了该色素的吸收光谱。用紫外一可见分光光度计测定pH值、金属离子、热、光等因素对藏花素的影响。用原子吸收分光光度计测定了藏花素中As、Pb含量。从而得出:藏花素溶解性好,着色力强、金属离子、酸、碱、糖对色调无影响;耐热、耐光、As、Pb含量很低,是一种比较理想的天然食用黄色素。


Determination Physicochemical Properties of Crocin
Abstract:Crocin is a kind of natural yellow pigment which is a natural food additive refined from fruit of gardenia (rubiacea plant). In the paper, physical and chemical characteristics of crocin, the influence of factores such as pH, metal-ion, heat, light etc. have been determined by UV-VIS spectrophotometer. The content of As and Pb was determined by using atomic absorption spectrophotometer.The results show that crocin is a ideal natural yellow food pigment. It can dissove in water very easily and is stable to meet acid, basic light and head. The content of As and Pb is undetectable by above method (which means its content is close to reference sample).
