基于SEM图像处理法的冻干马铃薯内部孔隙率表征

摘    要:基于数字图像处理分析技术,提出一种测量真空冷冻干燥马铃薯内部孔隙结构特征研究的方法。首先采用Photoshop软件确定冻干马铃薯块SEM图像的分割阀值,而后运用MatLab软件进行面积统计,计算真空冷冻干燥马铃薯内部的孔隙率。测试结果表明,冻干马铃薯内部的孔隙率随着尺寸的增大先增大而后减小。同时将图像处理方法与压汞法测试的结果进行比较,发现误差在1 0%-1 3%范围内。经图像处理方法获得1 0mm的马铃薯块在缓慢预冷冻至-30℃时,其冻干后孔隙率最大,约为61%。

Abstract:In this paper, a porosity determination method was proposed for the freeze-dried potato based on the image processing method. The potato was first frozen using different methods and then was vacuum-dried. Scanning Electron Microscope (SEM) photographs were taken for the sliced dried potato and then were converted into the black-white images by image processing. By accumulating the area ratio of the black pixel in the image, the porosity of the freeze-dried potato can be determined. It was found that the porosity varies between 0.28 and 0.61 and the sample size plays a important role in the porosity in this experiment.
