摘    要:近年来转基因食品在全球的发展非常迅速,但同时,其食用安全与否也成了摆在政府、科学界和消费者面前的首要问题。植物食品中存在许多种天然毒素和抗营养素,可降低食品的营养价值或对人体产生毒性作用。而转基因食品由于外源基因的插入,是否会影响食品中天然毒素和抗营养素的表达或含量的高低是一个值得关注的食用安全性问题,同时也是评价转基因食品与亲本食品“实质等同性”的一个关键指标。文章在介绍了食品中常见天然毒素和抗营养素的基础上,总结了国外文献中转基因植物食品(大豆、玉米、油菜、番茄、马铃薯)中天然毒素和抗营养素的检测结果,以期为今后的政策和研究提供依据。

Abstract:With the rapid development of genetically modified food in the world,the safety assessment of these novel foods is becoming the first question for government,scientists and consumer. There are many types of inherent toxins and anti-nutrients in food which can decrease the nutritional value or do harm to people. Because of the insertion of foreign gene,if the content of inherent toxins and anti-nutrients in genetically modified foods can be influenced should be concerned,it's also useful to see if the genetically modified food is'substantial equivalence'to their parental lines. The results of the inherent toxins and anti-nutrients content in some genetically modified plant food (soybean,maize,rape,tomato and potato) in foreign documents were reviewed in this paper,in order to provide scientific data for the law of safety assessment of genetically modified food in the future.
