摘    要:采用复凝聚法以明胶和阿拉伯胶为壁材,以光学形态和包埋率为考察指标研究茴香精油微胶囊制备最佳工艺条件.结果表明,最佳工艺为pH值为3.4,明胶:阿拉伯胶1∶1,壁材总浓度1%,芯壁比1∶1,体系温度45℃,搅拌速度500r/min,包埋率为84.7%.微胶囊壁膜光滑,大小均一.

Abstract:Using gelatin and Arabic gum as wall materials, optical morphology and embedding rate as index, the microencapsulation conditions for fennel essential oil were optimized.The results showed that the optimal conditions were pH value 3.4, the ratio of gelatin to Arabic gum 1 :1, the colloid concentration 1%, the ratio of core to wall 1:1, temperature 45℃ and shaking speed 500r/min. Under these conditions, the embedding rate of oil was up to 84.7% with smooth and uniform size microcapsules.
