摘    要:采用酶解法提取虾蛄壳中的多肽。通过单因素实验分别考察时间、温度、酶量和pH值的变化对多肽提取率的影响,确定合适的水平。再用响应面法对工艺参数进行优化,并得到回归方程。结果表明,最优水解条件pH值为8.36,酶解温度55℃,酶解时间3.95h,酶量0.92%,在此条件下,氨基态含量为0.896mg/g,预测值:0.88mg/g。

Abstract:Abslraet: The polypeptide was extracted from Oratosquilla oratoda shell by a method of enzymatic hydrolysis techniques. A series of single-factor experiments, such as time, temperature, pH value, enzyme dosages, were made to investigate the effects of the extraction ratio for optimal levels, using response surface analysis to optimize the main process parameters and getting a regression equation. The optimum conditions for extraction were found: temperature 55℃, pH value 8.36, time 3.95h, enzyme dosage 0.92%, under these conditions, The extraction ratio of polypeptide was 0.896mg/g, the predictive value was0.88mg/g, it indicated that the optimized process was reliable.
