宁夏盐池县7种小杂粮中微量元素锌、锰、铜、铁的初步调查

摘    要:小杂粮是我国医食同源的保健食品原料作物,但不同种类小杂粮微量元素含量的报道很少.该文以火焰原子吸收法测定了荞麦、小米、黄米、豌豆、绿豆、扁豆、红豆7种小杂粮中锌、锰、铜、铁的含量,结果表明,7种小杂粮中锌、锰、铜、铁4种微量元素含量都比较高.虽然不同种类元素之间的含量稍有差异,但是这些元素在药用机理方面有不可替代的作用.该文为开发小杂粮保健食品和深加工研究提供理论基础.

Abstract:Minor grain crop is a kind of medical food source of health food in China, but few reports for the trace element in different minor grain crops. Four trace elements Zn, Mn, Cu and Fe were determined in buckwheat, millet, glutinous millet, mung bean, red bean, pea and lentil by flame atomic absorption spectrometry. The results showed that, the contents of Zn, Mn, Cu, Fe in 7 crops were all higher. Between elements of different types of content is slightly different, but these elements in terms of medicinal mechanism has an irreplaceable role. For the development of health food and deep processing of minor grain crops, it provided a theoretical basis. Key words: minor grain crop; trace elements; preliminary investigation; Ningxia Yanchi
