搅拌型葛花汁无糖酸乳的研制

摘    要:以葛花水提取液、木糖醇、纯牛乳为主要原料,采用正交试验优化搅拌型葛花汁酸乳的最佳发酵工艺条件和配方。结果表明,搅拌型葛花汁无糖酸乳的最佳生产工艺及配方为:葛花水提取液5%,木糖醇6%,发酵剂接种量4%,发酵时间3h,产品风味独特,具有葛花汁、乳香特有复合香味、组织均匀、营养丰富。

Abstract:Using pueraria flowers extract, xylitol, pure milk as the main raw material, the fermentation process conditions and formula of mixing pueraria flowers juice yoghurt were optimized by the orthogonal experiment. The results showed that pueraria flowers juice yoghurt production technology and the best formula were as follow: pueraria flowers extract 5%, xylitol 6%, 4% inoculated quantity, fermentation time 3h. The product had unique flavor, with pueraria flowers juice, frankincense peculiar smell, fme organization, and rich nutrition.
