| 摘 要： | 研究了发酵乳中乙醛含量的酚试剂分光光度测定法,确定该方法的基本操作及显色剂添加量,并讨论了乙醛的回收率及该方法的重复性问题,为发酵乳制品中乙醛含量的测定提供了简单便利、经济可行的实验方法。

| Abstract: | A new spectrophotometric methed for analyzing the content of aldehydes in fermented milk was developed with NBTH in this paper,including the study on main processes,the concentration of reactive reagents,the recovery rate of aldehydes and the repeatability. It proved to be a simple,convenient,economical and feasible method for the determination aldehydes in fermented milk. |
