摘    要:为研究壶瓶碎米荠种子中富硒油脂的理化特征及体外抗氧化能力,采用索氏提取法提取壶瓶碎米荠种子中富硒油脂,参照国家标准对酸价、过氧化值等指标进行评价,利用HS-SPME-GC-MS和GC-MS法鉴定油脂组成及其油脂挥发性物质,微波消解-原子荧光法测定油脂中硒的含量,福林酚法测定油脂中总酚含量;以该油脂对DPPH、超氧阴离子...

Physicochemical characteristics and antioxidant activity of selenium rich oil from Cardamine hupingshanensis
Abstract:objective:Study the physicochemical characteristics and in vitro antioxidant capacity of selenium rich oil from Cardamine hupingshanensis seeds.Method:Extraction of selenium rich oil from Cardamine hupingshanensis seeds by Soxhlet extraction,the acid value and peroxide value were evaluated according to the national standard,HS-SPME-GC-MS and GC-MS were used to identify the composition of oil and its volatile compounds,determination of selenium in oil by Microwave Digestion Atomic Fluorescence Spectrometry,the antioxidant activity of the grease was studied in vitro by taking the scavenging rate of DPPH and superoxide anion radical as the evaluation index.Result:the oil yield of Cardamine hupingshanensis seed was 31 ± 2.85%,the iodine value and peroxide value of the oil met the national standard,the acid value is 0.83mgKOH/g higher than the national standard, and the selenium content is 8.439mg/kg, reaching the local selenium rich standard of Hubei Province,the total phenol content was 1.428 ± 0.032mg/mL;the fatty acid composition of oil was mainly unsaturated fatty acid (92.49%), including essential fatty acid linoleic acid (25.4%) and linolenic acid (2.49%),there are 56 kinds of volatile components in oil, such as benzene, hydrocarbons, alcohols and esters;the IC50 of scavenging DPPH and superoxide anion radical were 15.749mg/mL and 1.070mg/mL respectively, different concentration ranges have different correlations, and there is dose effect.
