2,6-脱氧果糖嗪的分离提纯及其向烟气释放致香成分的研究

摘    要:采用纳滤及电渗析技术从美拉德反应产物中分离、提纯2,6-脱氧果糖嗪,经HRMS,1HNMR,13CNMR,GC-MS等鉴定,证实了其结构。实验结果表明,采用纳滤及电渗析分离方法可高效、简便、环保地分离、提取2,6-脱氧果糖嗪,产率高达35%。对2,6-脱氧果糖嗪进行同步热分析研究,并将其卷烟加香,收集烟气进行GC-MS检测,结果表明:2,6-脱氧果糖嗪裂解可向烟气释放2-甲基吡嗪、2,6-二甲基吡嗪和2-乙基-6-甲基吡嗪等致香成分,证实该化合物为有效的烟用香气前体物。

Abstract:Electrodialysis and nanofiltration membrane technology were proposed to eliminate polymeric caramel colors and electrolytes from reaction mixtures to isolate and purify 2,6-deoxyfructosazine with high yield of 35%.Structure of 2,6-deoxyfructosazine was confirmed by HRMS,1HNMR,13CNMR,and silylated-GC-MS.When pyrolyzed,2,6-deoxyfructosazine may be decomposed to produce 2-methylpyrazine,2,6-dimethylpyrazine,and 2-ethyl-6-methylpyrazine in tobacco smoke.
