| 摘 要： | 以制革废弃物中提取的水解胶原蛋白为原料,采用高速搅拌器进行乳化过程,探讨了转速和时间对胶原蛋白乳化性的影响.结果表明,当转速为2 000r/min,乳化时间为20min时,胶原蛋白的乳化性和乳化稳定性较好.在此基础上考察了pH值、NaCl浓度、水解胶原蛋白浓度和水解胶原蛋白的分子量等因素对水解胶原蛋白乳化性及乳化稳定性的影响.

| Abstract: | The hydrolyzed collagen extracted from leather wastes was used as raw material , high speed mixer is adopted to improve the emulsifying process ,at first we discusses the speed and time effect on the emulsification of collagen .The results show that when the rotating speed of 2 000 r/min ,the emulsifying time to 20 min collagen emulsification and emulsion stability is good .And on this condition ,pH ,NaCl concentration ,the concentration of the hydrolyzed collagen and collagen hydrolysate of hydrolyzed collagen ,molecular w eight and the effects of emulsification and emulsion stability . |
