| 摘 要： | 脂肪酸单甘油酯越来越引起人们的重视，生产单甘酯的方法也日益多样。主要介绍了利用脂肪酶的催化特性，在甘油解、选择性水解以及脂肪酸或酯与甘油的转酯反应生产单甘酯的工艺过程，并与传统化学方法进行了比较。同时，综合文献对一些新的工艺、反应体系作了介绍。

| Abstract: | The catahytic ability of Lipase was used in synthesis of monoglyceride,such as glycerolysis,selective hydrolysis of fats and oils,esterfication of fatty acids or esters with gbycerol.This paper compared the enzymatic synthesis with traditionary chemical method and introduced some new technique and reaction systems. |
