果蔬冰温储藏技术研究

摘    要:通过对当前国内外冰温技术的研究状况分析,结合中日合作项目“冰温技术运用”的研究成果,总结了果蔬冰温储藏技术的关键要素,储藏前冰温驯化过程与流场均匀技术。本文还对冰温技术的基本原理和超冰温技术进行了探讨。

Study on Ice-temperature Preservation Technology of Fruit and Vegetable

Abstract:Based on the analysis of conferences of ice-temperature technology, and the experimental works of the project "Application of ice temperature technology" founded by Japanese Government, the key technologies of ice temperature preservation summarized, including two factors: cooling rate and well-distributed flow field technol.The paper also introduce the frndamental of ice-temperature technology and exceed ice-temperature technology.
