| 摘 要： | 在美食旅游概念阐述及美食旅游研究述评的基础上,对大湘西美食资源特点进行分析。大湘西属亚热带内陆山区,在食材采集、储存、烹调和饮食文化方面呈现原生态、腊味酸味繁多、多民族性等特点。另外,在美食旅游供应链理论的基础之上,从美食旅游的设施、事件、路线、组织等方面提出开发大湘西美食资源的具体策略。
