提高红曲色素水溶性的方法研究

摘    要:为提高红曲色素的水溶性,拓宽其应用范围,研究了提高其亲水性的技术方法.选用海藻酸钠水溶液和红曲色素乙醇提取液,将两者按比例混溶,加热回流一定时间,使两种化合物分子间发生反应,从而改善红曲色素的水溶性.通过单因素条件试验和正交试验确定了最适工艺条件:海藻酸钠水溶液质量浓度为4.0 mg//mL,红曲色素乙醇提取液和海藻酸钠水溶液混合体积比为15:5,回流温度60℃,回流时间为40min.以红外光谱法证实了红曲色素与海藻酸钠有分子间缔合,从而提高了红曲色素的水溶性.

Abstract:The technic of improving the water solubility of monascouruarin(monascus pigment) to widen its ap-plication was studied.Sodium alginate water solution was mixed with monascouruarin ethanol solution prepared by GB4926-1985 method,and the mixed solution was refluxing heated for molecular association.Results:The optimal conditions determined with single factor test and orthogonal test are concentration of sodium alginate water solution 4.0 mg/mL,mixing ratio of monascouruarin ethanol solution to sodium alginate water solution 15:5 mL,refluxing temperature 60℃ and refluxing time 40 min.The molecular association between monascouruarin and sodium alginate Was verified by infra-red spectrometry.
