市售两种酪蛋白磷酸肽产品持钙能力的比较

摘    要:对市售两种酪蛋白磷酸肽(CPP)产品体外结合钙离子的能力(即持钙能力)进行了测定和比较,结果表明CPP产品在弱碱性溶液中能有效抑制和延缓Ca3(PO4)2沉淀的产生,且在相同条件下,纯度越高,N/P值越低的CPP产品持钙能力越强。本文还讨论了在产品研发过程中如何选用CPP产品。

Abstract:The calcium binding capacities of casein phosphopeptide (CPP) were examined and compared between two sales CPP products. The results verified that CPP has the ability to keep calcium ion in a soluble form but produce Ca 3(PO 4) 2 deposition, and the lower value of N/P of product the better calcium binding capacities of CPP product. In the end of the paper how to use CPP product in foods or health foods is also discussed.
