清真牛羊肉质量安全的全方位、多层次管理体系构建研究

摘    要:建立清真牛羊肉质量安全保障体系是改善我国清真牛羊肉质量安全状况的重要手段,是中国清真牛羊肉及其制品突破国际贸易壁垒,提升国际竞争力必须解决的问题。本文提出以集成现有牛羊肉生产标准及清真认证标准,建立预警、监控、追溯体系,以构建清真牛羊肉质量安全保障体系的思想,并提出了清真牛羊肉质量安全信息平台的建设思路及构建模式,为建立全方位、多层次清真牛羊肉质量安全保障体系提供管理学理论依据。
