| 摘 要： | 天然姜黄色素是姜黄的有效成分之一，不但可以作为食品添加剂而且具有独特的药理功能。作者在本文中对姜黄色素的理化性质、稳定性、提取、测定及其生理功能作了简要的综述，为开发和利用姜黄色素提供了科学依据。

| Abstract: | Natural curcumin is one of rhizoma curcuma longae's effective components. It is used not only as food additive but also as drug. This paper reviews on physical and chemical properties,stability, determination and extraction,physiological function of curcumin and its development prospects. In the meantime, it provides scientific basis to developing and applying curcumin. |
