摘    要:啤酒酵母分离纯化是啤酒生产中的重要环节。系统地介绍了啤酒酵母菌株的分离纯化过程,并且对其发酵力、死灭温度、凝集性等性能进行了测定;且在选育出的菌株中选择活力强、发酵速度快、发酵力高、有适度凝集性的菌株进行了扩大生产实验。

Abstract:Separate and purify beer yeast is very important in production of the beer,this article have been talked in detail in the separation and purification about the beer yeast strain,and examined the strains characters in brewing activity,the temperature of death、accumulating.We choose the high brewing activity,high speed of brewing,and available accumulating strain to improve the production experiment.
