摘    要:<正> RYOTO蔗糖酯是由蔗糖和天然植物脂肪酸通过酯化合成的具有安全性的非离子表面活性剂。RYOTO蔗糖酯是在蔗糖的羟基上由脂肪酸进行酯化结合的产品:1个蔗糖的分子,总共有8个羟基。理论上,其结合范围可以从1个蔗糖分子与1个脂肪酸结合的单酯产品到1个蔗糖分


The Application of RYOTO Sugar Ester in Lipid Products
Abstract:RYOTO Sugar Ester, a top brand emulsifier for food, is one of the main products developed by Mitsubishi-Kagaku Foods Corp. RYOTO Sugar Ester is a safe, non-ionic emulsifier manufactured from natural sugar and fatty acids derived from vegetable oils. RYOTO Sugar Ester is obtained by combining sucrose with fatty acid through the esterification reaction. RYOTO Sugar Esters have a wider range of functions and properties than any other emulsifiers. Functionally, RYOTO Sugar Ester stabilizes emulsification of various foods and beverages, offers antibacterial effects in milk beverages, improves the physical properties of candies and chocolates, and so on. RYOTO Sugar Ester can be used for a wide range of food such as beverages, breads and cakes, confectionery, dairy products and fat & oil.
