酒类与人体健康关系的生理生化研究进展

摘    要:根据最近10年的国内外研究成果,对人体酒精摄入量进行了科学分级。资料显示适量的饮酒具有刺激微血管扩张、促进消化系统对养分和功能性成分吸收、加快血液循环、刺激大脑情感表达能力,提升人类情商的作用。但是过量的饮酒则会破坏消化系统的正常功能导致毒物无节制入侵肝肾的器官,酒精依赖者往往言语失态、百病缠身,酒后驾车,危及公众安全。酒精是酒类的基础物质,但是酒中少量的有害物质,往往是决定酒的质量的关键物质,控制酒类中有害物质含量是酒类酿造全过程都要关注的大事。酒中同样少量的功能性成分已经成为酒类品牌大战的秘密武器。中国酒文化要重振雄风,首要任务是加强酒类生产和消费的科学研究。

Abstract:According to domestic and foreign research in the latest 10 years,scientific classification of alcohol intake on the human body has been conducted.Studies have shown that moderate drinking can stimulate the expansion of capillaries and promote digestive system to absorb nutrients and functional ingredients,and speed up blood circulation,stimulate the brain capacity of emotional expression and enhance the role of human emotional intelligence.But heavy drinking can undermine the normal function of the digestive system,leading to uncontrolled invasion of poison to liver and kidney organs.Alcohol-dependent persons are often verbal gaffe,crippling,drunk driving,and endangering the public safety.Alcohol is the base of all kinds of alcoholic beverage,whereas,the small amount of harmful substances in it is the key to determine the quality of alcoholic beverage,therefore,how to control the amount of the harmful substances is concerned in the whole process of brewing.Small amount of functional components present in the alcoholic beverage become the secret weapon of alcoholic beverage brand war.To restore its former glory of China's wine culture,the first task is to strengthen alcohol scientific research of brewing and drinking.
