摘    要:贵州茅台酒高踞世界三大蒸馏名酒之一。通过对茅台酒及酿造地区进行研究,发现茅台酒生产区域环境具有其他地区不可复制的特点,对茅台酒品质起决定性作用。该文从地质结构和土壤特征、优越的河流生态环境和水质中微量元素、适宜的气候环境和微生物群落特征三个方面进行了综述,对茅台酒厂未来发展方向、环境保护以及相关研究有一定的参考价值。

Abstract:Guizhou Moutai liquor is one of the three most famous distilled liquor in the world. Through the research on Moutai liquor and brewing region, the production area environment of Moutai liquor had characteristics that the other regions could not copy, which played a decisive role on the quality of Moutai liquor. The three aspects including the geological structure and soil characteristics, superior river ecological environment and trace elements in water, appropriate climatic environment and microbial community were summarized, which had certain reference value for the future development direction of Moutai distilleries, environmental protection and related research.
