摘    要:几丁质酶(chitinase)是一类可催化几丁质水解为N-乙酰氨基葡萄糖寡聚体或单体的糖苷水解酶,广泛存在于微生物(真菌、细菌、放线菌与病毒)及动植物中,因其特殊的生理功能而被广泛应用于生物防治、医学应用、废弃物处理及环境保护等领域。文章综述了微生物几丁质酶的来源与分类、发酵条件、酶学性质及应用领域,以期为几丁质酶的进一步开发应用提供理论指导。

Abstract:Chitinase is a kind of glucoside hydrolase which can catalyze chitin hydrolysis to N-acetyl glucosamine oligomers or monomers, and widely found in microbe (fungi, bacteria, actinomycetes and viruses), animals and plants. Because of its special physiological function, chitinase is widely used in biological control, medical application, waste management, environmental protection and other field. The source and classification, fermentation conditions, enzymology properties and applications of microbial chitinase were summarized, in order to provide theoretical guidance for further development and application of chitinase.
