摘    要:在单因素试验的基础上,对混合原料高浓度酒精发酵工艺进行正交试验优化,结果表明,影响高浓度酒精发酵因素的主次顺序为发酵温度>糖化酶添加量>发酵时间>接种量>摇床转速,最佳发酵条件参数为发酵温度33 ℃、糖化酶添加量160 U/g、发酵时间60 h、接种量25%、摇床转速140 r/min。在此最佳工艺条件下,发酵醪酒精度可达到15.95%vol。

Abstract:On the basis of single factor experiments, the high concentration alcohol fermentation process of mixed raw materials was optimized by orthogonal experiments. The results showed that the factors affecting high concentration alcohol fermentation in order were fermentation temperature, glucoamylase addition, fermentation time, inoculum and shaker speed. The optimum fermentation conditions were temperature 33 ℃, glucoamylase addition 160 U/g, time 60 h, inoculum 25% and shaker speed 140 r/min. Under the optimum conditions, the alcohol content of fermented mash was up to 15.95%vol.
