摘    要:建立一种识别大曲酱香轮次基酒的方法。以91个大曲酱香轮次基酒为样本,并以每一样本的乙醛、甲醇、乙酸乙酯、正丙醇等15个共有峰的气相色谱定性定量结果为评价指标,采用SPSS 19.0统计软件进行主成分分析和判别分析识别大曲酱香各轮次基酒。结果表明,该方法具有良好的精密度、稳定性和重现性,对随机挑选企业提供的63个大曲酱香轮次基酒样品进行判别分析,其准确率为90.5%,表明该方法可作为大曲酱香轮次基酒的识别方法。

Abstract:An identification method of basic batch distillates for Daqu Moutai-flavor Baijiu (Chinese liquor) was established. Using the 91 basic batch distillates as the samples, the gas chromatography quantitative and quantitative results of 15 common peaks (including acetaldehyde, methanol, ethyl acetate, propyl alcohol, ect.) as evaluation index, principal component analysis and discriminant analysis were carried out by SPSS 19.0 statistical software to identify each basic batch distillates for Daqu Moutai-flavor Baijiu. The results showed the method had good precision, stability and reproducibility. The 63 basic batch distillates simples from companies selected randomly were analyzed, the accuracy rate was 90.5%, which indicated that the method could be used as the identification method of basic batch distillates for Daqu Moutai-flavor Baijiu.
