黄酒生物活性成分及其功能研究进展

摘    要:黄酒是中国民族特产和传统食品,与啤酒和葡萄酒并称为世界三大古酒。该文分析了黄酒中的生物活性成分,论述了黄酒的抗氧化、降血压以及提高免疫力等功能,提出了我国黄酒现阶段存在的问题,并对黄酒生物活性成分的研究方向进行了展望。

Abstract:Chinese rice wine is national specialty and traditional food of China, and known as the world's three ancient wines with beer and grape wine. In this paper, the bioactive components in Chinese rice wine were analyzed. The functions of Chinese rice wine (including antioxidation, lowering blood pressure, improving immunity) were reviewed. The problems existing in Chinese rice wine and development directions of bioactive components in Chinese rice wine were put forward.
