Abstract:Hazard Analysis and Critical Control Points (HACCP) is scientific and effective tools to prevent and control food safety hazards and prevent food safety incidents. But hazard analysis and establish corresponding control measures are also difficult for most food enterprises, result in food disqualification incidents frequently.There are millions of food safety supervision sampling annual in our country, which is the basis of big data analysis. Using of big data can target high-risk industry and hazards of food safety problems.The purpose of this study is to use big data to analyze the causes of food sampling failure and corrective measures, then to guide food enterprises to manage and practice systematic, to carry out risk detection in the process of production and operation, to prevent and control food safety hazards from origin. And then establish control measures to share experience with all the industry, improve the overall level of China''s food safety management, to meet the people''s growing need of better food safety.
