小黄鱼蛋白酶解液抗氧化活性研究

摘    要:本文以小黄花鱼为原料,利用蛋白酶解技术对小黄鱼蛋白进行酶解,分别选取4组水解度不同的蛋白酶解液,测定其对羟基自由基、超氧阴离子自由基和DPPH自由基的清除能力,以评定其抗氧化效果。结果表明:小黄鱼蛋白酶解液对羟自由基、DPPH自由基的清除效果比较明显,对超氧阴离子也有一定的清除效果。由此可知小黄鱼酶解液是一种比较好的抗氧化剂,在功能性食品中作为添加剂具有较好的应用前景。

Abstract:Antioxidative properties of protein hydrolysa|es prepared from small yellow croaker (Psendosciaena pol)actis ) were studied. Hydrolysis product in different DH conditions were chose to delermine their capability of clearing free radieals. There is a linear parallel relationship between degrees of hydrolysis arid antioxidant activity. These results sug- gested that hydrolysates prepared from small yellow croaker eould be used as a ibod ingredient tbr direct proman consumption.
