烟台产区‘赤霞珠’转色后指标的变化研究

摘    要:研究2016年和2017年不同成熟度下‘赤霞珠’葡萄皮和葡萄籽中的总酚、黄烷醇和花色苷含量的差异,并分析不同成熟度葡 萄指标之间的相关性。通过主成分分析(PCA),对不同成熟度葡萄品质进行研究,确定烟台产区‘赤霞珠’葡萄的最佳采收期。 结果表 明,随着采收时间的推移,‘赤霞珠’葡萄的还原糖含量、可溶性固形物含量、糖酸比呈不断上升趋势,总酸含量不断下降;葡萄果皮中 的总酚和黄烷醇含量呈先上升后下降趋势且呈显著正相关(P<0.05),花色苷呈不断上升的趋势;葡萄果籽中的总酚、黄烷醇含量均 呈先下降后上升趋势且呈显著正相关(P<0.05)。 烟台产区‘赤霞珠’葡萄的最佳采收时间在转色后5周左右。

Abstract:The differences of total phenols, flavanols and anthocyanins contents in peel and seeds of Cabernet Sauvignon at different maturity in 2016 and 2017 were studied, and the relations between the indexes of grapes with different maturity was analyzed. By principle component analysis (PCA), the optimum harvest time of Cabernet Sauvignon grape in Yantai region was determined by studying the quality of grape with different maturity. The results showed that with the development of harvest time, the contents of reducing sugar, soluble solids, sugar-acid ratio of Cabernet Sauvignon in- creased, while the content of total acid decreased. The contents of total phenols and flavanols in grape peel firstly increased and then decreased, and their contents showed positive correlation (P<0.05), while the anthocyanin content increased gradually. The contents of total phenols and flavanols in seeds firstly decreased and then increased, and their contents showed positive correlation (P<0.05). The optimal harvest date of Cabernet Sauvignon grapes in Yantai region was around 5 weeks after verasion.
