| 摘 要： | 基于黑米中的特征物质黑米色素在不同pH值下呈现不同颜色及其主要成分花青素与Fe^2＋形成黑色配合物的原理,研究了一种快速鉴别黑米真伪的方法.将黑米浸提液分别滴在空白滤纸和碱性滤纸上,用肉眼观察滤纸的颜色变化情况,再在该处滴加硫酸亚铁溶液,用同样的方法进行鉴别.黑米色素在空白滤纸上呈紫红色,在碱性滤纸上呈蓝色,再在其上滴加Fe^2＋溶液后,滤纸上呈现黑色斑点,以此现象来鉴别黑米的真伪.该方法可靠、操作简单、方便快捷,可用于快速鉴别黑米的真伪.
