凝胶扫描电镜图像的对比分析

摘    要:分析相同工艺制作的鱼糜凝胶的扫描电镜(SEM)图像。通过比较不同放大倍数下鱼糜凝胶的断面和切面SEM图像的表面状况、光密度分布及光密度的方差值,得出SEM断面图像的表面比切面图像粗糙,在评价鱼糜凝胶的致密程度时容易造成判断误差,而切面SEM图像更好地反映了鱼糜凝胶的致密程度,这可以由鱼糜凝胶的SEM切面图像的光密度显著(p<0.05)高于断面图像、SEM切面的光密度方差较断面图像高进行验证。

Abstract:Scanning electron microscope(SEM) pictures of surimi gels were analyzed.Optical features,optical density,and variance value of SEM pictures with broken or cut surface and with different enlarged sizes,were compared.The results indicated that the SEM pictures with broken surface can mislead the analysis result,but the cut surface is suitable to check when it was used to analyze the compactness of surimi gels.This can be supported by the optical density of cut SEM pictures,which were significantly(p<0.05) hig...
