| 摘 要： | 以花生壳为原料，经粉碎过筛后，采用一次酸提、二次酸提、三次酸提、微波提取和超声波提取等方法提取其中的功能性成分之一--水溶性膳食纤维(SDF)，测定每种方法的提取率和所得到的SDF 中的非淀粉性多糖(NSP)的含量，并计算它们的综合评分。结果表明：在这五种提取方法中，三次酸提的提取率最大，微波提取的SDF 中NSP 的百分含量最大，综合评分是三次酸提最大。同时，还研究了SDF 的铁还原力、钼还原力、清除DPPH 自由基、超氧阴离子自由基和羟自由基等五种抗氧化活性。
