摘    要:实验研究了不同前处理工艺条件对仙人掌中粗多糖和总黄酮含量的影响。结果表明,初步细化和高压均质对粗多糖和总黄酮成分均有影响。选用纱布挤压替代胶体磨处理,不但可降低能耗,而且有效减少多糖和黄酮类物质的损失;在满足喷雾干燥工艺要求的前提下,选用高压短时的均质条件,可有效保留多糖和黄酮类物质;去皮处理对仙人掌中的多糖含量影响不大,而且可减少高压均质时间,降低能耗,但去皮处理使得黄酮类物质的损失较大。

Abstract:In order to effectively keep the functional polysaccharide components and total flavonoids of cactus, we adopted different pretreatment conditions to process cactus-powder products. The results showed that the comminution method and homogenization pressure obviously affected the content of polysaccharide and total flavonoids. Comminution with pledged filtration could effectively reduce the loss of polysaccharide and total flavonoids. The contents of polysaccharide and total flavonoids could effectively be retained under higher homogenization pressure and shorter pulping time. Peeling process had a little effect on the content of polysaccharide, but led to the loss of total flavonoids, therefore we suggested that the peel should be kept to preserve the nutrients of cactus.
