黑葵花籽壳中主要花色苷类物质的结构分析

摘    要:为确定黑葵花籽壳中主要花色苷类物质的结构,采用高效液相色谱(HPLC)和高效液相色谱串联四极杆质谱研究黑葵花籽壳中的花色苷类物质,结果表明:纯化后的黑葵花籽壳花色苷主要有两种单体,之后采用纸层析对两种物质进行分离,再用红外光谱、紫外-可见光谱、Francis的研究结论等方法对两种单体结构初步推测。最后采用高效液相色谱串联四极杆质谱对两种花色苷结构确认为:花青素-3-O-单葡萄糖苷和甲基花青素-3-O-单葡萄糖苷两种单体。

Abstract:The structures of major anthocyanins purified from black sunflower seed shell were analyzed by HPLC and HPLC-tandem quadrupole mass spectrometry (HPLC-MS/MS). Two major monomers were observed in purified anthocyanins. Both monomers were further separated by paper chromatography (PC). They were identified as cyanidin-3-O-monoglucoside and peonidin-3-O-monoglucoside, respectively according to the results of infrared spectroscopy (IR), ultraviolet spectroscopy (UV) and Francis studies and HPLC-MS/MS analysis.
