Abstract:Objective To optimize the processing technology of Dendrobium huoshanense sports drink and study its anti-fatigue effects. Methods The optimal process parameters of Dendrobium huoshanense sports drink were optimized by single factor test and orthogonal test, and the anti-fatigue effect of sport drink was studied by studyingthe swimming time, blood lactic acid and blood urea nitrogen of exhaustion mice. Results The optimized formulas of the sports drink were as follows: Dendrobium huoshanense extract 25%, sugar 6.0%, citric acid 0.12%. Under such conditions, the sensory score was 94.6. The results showed that Dendrobium huoshanense sports drink had no significant impact on body weight of mice (P>0.05), the swimming time of exhaustion mice was significantly increased (P<0.05), and the biochemical analysis found that the accumulation of blood lactic acid and blood urea nitrogen in the serum were inhibited (P<0.05). Conclusion Dendrobium huoshanense sports drink has certain anti-fatigue effect on mice.
