| 摘 要： | 小麦啤酒以其特殊的小麦芽香气,风味上较普通大麦啤酒有显著特点,深受消费者的青睐,国内对小麦啤酒研究的起步较晚,还没有一个统一的生产标准,不同企业的生产过程、工艺参数也不一致,本文对现有小麦啤酒的生产方式、关键的生产技术、质量保证手段和基本技术要求做一综述。

| Abstract: | The wheat beer was be favored by the consumer because the particular flavor of wheat malt. The time to start the studies about wheat beer is lately, then there have no manufacturing practice for the production corporation, so in differently company the process and parameter of produce is also dissimilarity. There is a review about the process, technology of production in this paper. |
