摘    要:梅汁冬瓜以冬瓜、乌梅等为原料,将鲜冬瓜经整理切制、灰水浸渍、冲漂、预煮、浸洗压干和乌梅浸渍等工序制成,成品微酸松脆,具有收敛生津、涩肠止泻之功效,对大肠杆菌、痢疾杆菌和伤寒杆菌等均有抑制作用。醉越瓜以越瓜、米酒等为原料,将鲜越瓜经腌制、阴干、烤瓜、酒渍和密封等工序制成,产品呈桔红色、有光泽,鲜美脆嫩.具有醇和酯香味。

Abstract:Pickled wax gourd uses wax gourd and Wumei as the raw material. Initially, the fresh wax gourd is cleaned and cut into slices. After a whole process of salty water soaking, rinsing, precooking, saddening- and - drying, and steeping with wumei juice, the sour and crisp pickled wax gourd is produced, It can increase the body fluid, astringe the enteron and stanch the lax and kill some bad bacillus, such as colon bacillus, dysentery bacillus and typhoid bacillus etc. The fresh oriental pickling melon and wine undergo a process of pickling, dropping, roasting wine steeping and sealing, then the wine - pickled oriental pickling melon is produced, With an orange color and a wonderful luster, it tastes tender and crisp and it has a special lipid flavor.
