超声萃取玉米皮中水溶性膳食纤维工艺研究

摘    要:以玉米皮为原料,通过单因素和正交试验探索直接水提法以及超声萃取法制备天然水溶性膳食纤维的最佳条件组合。结果表明:直接水提法提取天然水溶性膳食纤维的最佳条件是,浸提温度80℃,提取液pH值为5,时间为70min,料液比(g∶mL)为1∶10,提取率为57.14%。在上述最佳条件下超声萃取的最优组合为:功率400W,频率20040Hz,萃取时间15min,提取率高达70.18%,比直接水提法提高了提取率,且所得水溶性膳食纤维外观上要比直接水提取法好,颗粒较细腻。

Abstract:The optimum conditions of direct water extraction and ultrasonic extraction with single factor experiments and orthogonal tests in which Corn bran is used as raw materials to extract natural water-soluble dietary fiber were researched. The results showed that the optimum conditions of direct water extraction were as following: temperature 80℃,pH 5.0, time 70 min and solid-to-liquid ratio 1∶10, yields 57.14% and the optimum conditions of ultrasonic extraction were: the power 400W, frequency 20 040 Hz, extraction time 15min and the yields 70.18% than the yields of direct water extraction, what's more, the appearance of dietery fiber is better and the particle looks exquisite.
