摘    要:选用壳聚糖、单甘酯等原料组成复合涂膜剂处理新鲜蔬 菜,该涂膜剂配方由正交实验优化,在室温下贮藏黄瓜和 番茄,同时,进行失水率、硬度、叶绿素含量和Vc含量的 测定。

Abstract:Fresh vegetable were coated with the complex film -forming agent containing chitosan and glycerol monostearate,and the optimum composition of coating material were obtained. Cucumbers and tomatoes were stored at room temperature, and the rate of water-loss, firmness, total chlorophyll and Vc were measured.
