摘    要:分析了农产品中纤维物料粉碎的机理,提出剪切粉碎是对纤维物料有效的粉碎方式;通过计算流体力学软件ANSYS Fluent 13.0数值模拟分析,进一步表明:定、转子结构的高剪切粉碎机在工作过程中能产生强大的剪切力场,能有效地对纤维物料产生剪切细化的作用。最后,对豆渣、大豆等农产品物料进行湿法粉碎试验以及全豆豆浆与全豆豆制品的工艺性试验,探讨了剪切技术在农产品深加工中的应用。

Abstract:This paper analyzed the mechanism of fiber materials grinded and proposed the shearing cutting is the effective grinding way.The theoretical reference was proved by CFD simulation that the rotor-stator grinders can have the high-shearing refinement function effectively to the fiber materials.Then through the wet grinding of some fiber materials and whole bean products process test,we introduced the shearing technology in the application of deep processing of agricultural products.
