| 摘 要： | 建立了乳品中大肠菌群检测片快速检测方法,即以国标法中的乳糖发酵管培养基为基本营养成分,优化添加辅助营养成分、指示剂、缓冲剂、选择性抑菌剂,通过冷水凝胶剂等均匀固化于基片上,样品滴加检测片上,培养16～18 h即可直接依据检测片颜色的变化定量检样中大肠菌群的含量,结果可用MPN值报告。实验以多管发酵法为对照,分别用标定菌浓的大肠杆菌菌液和市售乳品样进行对比检测,结果表明,检测片的最低检出限为0～4 mL-1,所测结果与国标法结果相比符合率为96.7%,样品检测报告时间缩短50多小时,两种方法所测结果在统计学上无显著性差异(P>0.05),快速检测片作为一种价廉、简单、快捷、准确的检测方法,能应用于乳品中大肠菌群的快速检测。
