壳聚糖絮凝澄清胭脂萝卜汁的工艺研究

摘    要:采用壳聚糖对重庆涪陵胭脂萝卜汁液进行絮凝沉降的工艺研究。当胭脂萝卜破碎后经灭酶和渣液分离后,采用壳聚糖进行絮凝沉降,可有效去除萝卜渣微粒和部分生物大分子。通过试验得出,在pH为4.5,温度45℃条件下,浓度为0.3%时,壳聚糖对胭脂萝卜的澄清效果最好,透光率最强,且抑制了萝卜苷的分解,澄清液异味浓度低于1级,得到性能优良便于后续纯化的的萝卜红色素预处理液。

Abstract:Experiments were conducted to study the flocculation process with chitosan in treating the carmine radish liquor from Fu Ling,Chong Qing.After the carmine radish being crushed,the enzymes from the liquor were inactived and the solid waste was removed.In order to remove the microparticles and some biological macromolecules,chitosan was used as flocculating agent in pretreating the extracts of carmine radish.The optimum conditions of flocculation process with chitosan were obtained by orthogonal design experi...
