摘    要:阐述了以兔肉为主要原料,经腌制、预煮、上色、脱水、调香、真空包装等而成的无硝麻辣兔丁的加工工艺及其关键步骤和工艺指标的控制。研制出适合小型食品企业生产的兔肉休闲小食品。

Abstract:The processes to produce the nitrite-free,spicy diced rabbit meat using the rabbit meat as main raw materials,such as curing,pre-cooking,coloring,dehydrating,seasoning,vacuum packing were described in detail in this paper. The critical points and guidelines of the technology,which is suitable for the small-scale factory,were optimized.
